Sweet & Spicy Salsa

Ingredients

  • 6 lbs tomatoes
  • 1-3 jalapeņo peppers (adjust to taste)
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 1/2 tablespoons salt
  • 1 tablespoon cayenne pepper
  • 1 1/2 teaspoons ground cumin
  • 2 tablespoons garlic powder
  • 1/2 cup white vinegar
  • 18 oz tomato paste
  • 3 green bell peppers
  • 2 banana peppers
  • 1 white onion
  • 1 yellow onion
  • 1 red onion
  • 8 pint canning jars

Directions

  1. Peel tomatoes, chop tomatoes, onions, and peppers
  2. Combine all ingredients in large pot. Simmer until thick, about 3 hours.
  3. Sterilize jars and lids in boiling water for 5 minutes
  4. Fill hot jars with salsa at least 1/4" from rim of jar. Remove any air pockets from salsa. Wipe the jar rims clean and top with lids and rings.
  5. Place a rack in the bottom of a large pot filled about halfway full of water. Bring to full boil and carefully lower jars into water. Ensure the water covers the tops of the jars at least 1 inch, adding more boiling water as needed. Boil jars for 10 to 15 minutes.
  6. Remove jars from pot and place on cloth surface. After jars have cooled, press the center of each lid to ensure the seal is vacuumed down tight. Refrigerate salsa after opening and enjoy!
