Blueberry Cream Dessert

Ingredients

  • Crust
    • 1 1/2 cup graham crackers crumbs
    • 1/4 cup sugar
    • 1/2 cup butter or margarine melted
  • Cream filling
    • 1 package (8 ounces) cream cheese softened
    • 1/2 cup sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
  • Blueberry filling
    • 3 1/2 cup blueberries
    • 3/4 cup sugar
    • 2 tablespoon cornstarch
    • 1/4 teaspoon salt
    • 1 1/2 tablespoon lemon juice
  • Topping
    • 1 carton (8 ounce) whipped topping thawed

Directions

Crust
  1. In a bowl combine cracker crumbs, sugar and butter. Press into a greased 9x13 baking dish.
Cream filling
  1. In a mixing bowl beat cream cheese and sugar until smooth; add egg and vanilla. Pour over crust.
  2. Bake at 350 for 15-20 minutes or until set. Cool on wire rack.
Blueberry filling
  1. In a saucepan combine sugar, cornstarch and salt; add blueberries.
  2. Turn the heat to medium high and mash together the berries and other ingredients using a potato masher. Make sure the cornstarch is not lumpy. Stir continuously until the filling begins to thicken.
  3. Set the heat to low and allow to simmer for 5-10 minutes, then add lemon juice and stir together. Remove from heat and allow to cool.
Final step
  1. Once both have cooled, spread blueberry filling over cream and crust. Top with whipped topping. Refrigerate until serving.
